The bilona method is a five-step, entirely manual process of making ghee from whole milk — not from cream. Here is how it works at our farm:
- Whole-milk curd: Fresh A2 Gir cow milk is set into thick curd overnight in earthen pots.
- Hand-churning: At dawn, the curd is hand-churned on a wooden bilona — a two-ended churning stick turned with rope, back and forth, for hours.
- Makkhan extraction: White butter (makkhan) rises and is scooped out by hand.
- Slow-simmering: The makkhan is melted over a gentle wood fire, not an industrial burner, until the milk solids toast and settle.
- Straining: The golden liquid is strained while warm into glass jars.
The entire process takes 30 litres of A2 milk to produce just 1 litre of ghee. That's why bilona ghee costs more — and why it tastes incomparably better.
