Vedic Bilona Ghee

A2 Vedic Bilona Ghee — Hand-Churned, Golden

30 litres of pure A2 Gir cow milk. One wooden bilona. A slow, patient flame. That's all it takes — and all we use.

What Makes Our Bilona Ghee Different

Factory-made ghee starts with cream. Ours starts with curd — the way the ancient shastras prescribe and the way our grandmothers made it. Whole A2 Gir cow milk is set into thick curd overnight, then hand-churned at dawn on a wooden bilona until fresh makkhan rises.

The makkhan is then slow-simmered over a gentle flame — not a factory burner — until the milk solids toast and the kitchen fills with that unmistakable aroma. The result is grainy, golden, fragrant ghee that you can taste from the next room. No additives, no preservatives, no shortcuts.

The Bilona Process — Step by Step

The Vedic bilona method is a five-step journey from fresh A2 milk to golden ghee. Every step is done by hand, on our farm, with no machines.

1

Whole-milk curd

We culture full-cream A2 milk into thick curd overnight — the Vedic way starts with dahi, never cream.

2

Hand-churned at dawn

The wooden bilona turns slowly, rope over rope, while the farm is still waking up.

3

Fresh makkhan rises

White butter gathers on top, scooped out by hand the moment it forms.

4

Slow-simmered

The makkhan melts over a gentle flame until the solids toast and the kitchen smells of it.

5

Golden ghee

Strained while warm into glass jars — grainy, amber, and gone too quickly.

Frequently Asked Questions About Bilona Ghee

What is bilona ghee and how is it different from regular ghee?

Bilona ghee is made the Vedic way — from whole-milk curd, not cream. The curd is hand-churned on a wooden bilona to extract makkhan (white butter), which is then slow-simmered over a gentle flame. Regular factory ghee is made by separating cream from milk and processing it — faster, but it misses the depth of flavour and nutrients that the bilona method preserves.

Why does bilona ghee cost more than regular ghee?

It takes approximately 30 litres of A2 Gir cow milk to produce just 1 litre of bilona ghee. The process is entirely manual — from curd-setting overnight, to hand-churning at dawn, to slow-simmering over a low flame. No shortcuts, no machines. The yield is small, but the quality is incomparable.

How should I store bilona ghee?

Store it in a dry glass or steel jar with the lid closed, away from direct sunlight. No refrigeration is needed. Always use a dry spoon. Kept this way, bilona ghee stays beautifully for months — in most homes, it never gets the chance.

Is Goras Organic bilona ghee made from A2 milk?

Yes, every batch of our bilona ghee starts with pure A2 Gir cow milk from our own herd. The entire chain — milk, curd, makkhan, ghee — stays within our farm. Single-origin, single-herd, from grass to jar.
